This Mediterranean Hummus platter is the ultimate party appetizer. No need to make anything from scratch, just throw together your favorite ingredients for a seriously simple yet impressive snack.
Well, hello there happy hour! I’ve been waiting for you all week!! At the end of the week I’m usually texting friends and planning happy hours. But, with a busy work week who actually has time to prep food for a last-minute weekend gathering? Um, absolutely no one. That’s where a recipe like this comes in! It looks totally amazing but there is very little actual effort that goes into making this masterpiece, I promise!
The beauty of a platter like this is that it looks like you spent all day on it. The secret is, I didn’t make a thing on it! The hummus? Bought it. The falafels? Yep, those too. The tzatziki sauce? Oh heck yeah! I even picked up the grilled artichokes from Trader Joes! With happy hour, it’s all in the presentation. If you don’t have time to make something from scratch, don’t worry, just make it look like you did and everyone will assume you are a super hero and you have all your sh*t together.
Happy hours are great, but you don’t even need a happy hour date to make this. I live on platters like this all year-long. Some nights, dinner is so over rated and a platter of all your favorite flavors and ingredients is just what you need. In the summer, it’s packed with fresh fruit, vegetables and herbs but in the winter it can be pomegranate seeds, citrus, roasted veggies and whatever else your heart desires.
For this Mediterranean inspired platter I popped over to my favorite local special shop that makes the most amazing hummus and falafel. I was able to pick up most of the items there but any well-stocked grocery store should have ya covered.
Pair this lovely hummus platter with your favorite wine and have a very happy, happy hour!
