This summer we’re finding ourselves running from one thing to the next all while trying to soak up all the relaxing, fun-filled summer afternoons with friends. I’ve found myself spending less time in the kitchen and more time on the patio, less time cooking and more time plating something super easy and ya know what, that’s ok. Actually it’s better than ok, its awesome!
I’m getting more resourceful and spending time on the one thing I can make better than I could buy, then picking up the rest from my trusty neighborhood grocery store. That’s where this colorful pimento cheese snack tray comes in, it’s quick to make and perfect to share with friends.
If pimento cheese isn’t delicious enough on its own, how about serving it with a giant tray of fruits, veggies and snacks? Yum! The best part about a recipe list this is that it isn’t really a recipe at all! Make just one simple thing (pimento cheese) and create a pretty pile of delicious snacks around it. There’s something for everyone and you can feed a small army with very little effort.
I went with some crunchy fresh veggies like cucumber, carrots, bell peppers and tomatoes to keep it fresh but the fun southern twist is the mix of pimento cheese, candied pecans and peaches. Feel free to mix and match any of the ingredients to totally customize your snack, it’s hard to go wrong.

Ingredients
- 1 batch of Smoked Pimento Cheese Spread
- Baby carrots
- Sliced peaches
- Sliced bell pepper
- Sliced cucumber
- Grape tomatoes
- Celery sticks
- Corn chips
- Sweet bread and butter pickles
- Butter crackers
- Toasted white bread
- Candied pecans
- Salted peanuts
- Corn and black bean salsa
- Bacon Jam
Instructions
- Prepare desired ingredients and arrange on a platter. Serve immediately.
- Yep, it’s really that easy!

Awe, thanks Karen!! Pimento cheese is the best! Yes, I added a bit of a fancy flare and wrapped a few of the peach slices with prosciutto. 😋
