These messy slow cooker bourbon chicken sandwiches are spicy, boozy and totally party ready!

1 small onion, finely chopped (about 1/2 cup)
3/4 cup bourbon whiskey
3/4 cup ketchup
1/4 cup honey
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon red pepper flakes
2 garlic cloves, finely chopped
2 pounds bone-in, chicken thighs
6 slices pepper jack cheese
1 medium jalapeno, stemmed, thinly sliced
12 slices cooked bacon
6 pretzel buns, split
Instructions
In a 3 1/2 to 4-quart slow cooker, stir together the onion, bourbon, ketchup, honey, vinegar, Worcestershire, mustard, red pepper flakes and garlic. Remove the skin from the chicken thighs and trim any excess fat if necessary. Add the chicken to the slow cooker.
Cover; cook on Low heat for 6 to 8 hours or until the chicken is fork-tender and falling off the bone. Remove the chicken from the slow cooker to a cutting board and shred it with 2 forks.
Return the shredded chicken to the slow cooker and toss to coat with the sauce. Set the slow cooker on warm until ready to serve or let it cool and store it in the fridge.
To assemble the sandwiches, using a slotted spoon pile the chicken onto each bun, top with cheese slice, jalapeño slices and bacon.
