Apple Cinnamon Steel Cut Oatmeal
1 1/2 cups steel-cut oats
1 very ripe banana, sliced
1 medium apple, peeled and chopped
1/4 cup almond butter
1 cinnamon stick
4 cups water
2 cups milk (almond, soy or dairy)
Toppers
Toasted sliced almonds
Almond butter
Sliced apples
Ground Cinnamon
Instructions
Combine the oats, banana, chopped apple, almond butter and cinnamon stick in a lightly greased 4- to 6-quart slow cooker with the water and milk. Cover and cook on low heat for 7 to 8 hours until most of the liquid is absorbed and the oats are fully cooked. Discard the cinnamon stick and give the oats a good stir. Serve the oatmeal with desired toppings.
Store any leftover oatmeal in an airtight container in the fridge. Add a splash of milk and reheat when ready to eat.
