I’m an oatmeal fanatic! Overnight oats or homemade instant oatmeal, topped with fruit or an egg. I just can’t help but love the goopy, oaty stuff! But, steel cut oats take forever to make and ain’t nobody got time for that in the morning! So, dust off your slow cookers and make breakfast while you sleep!
I like it better than overnight oats since I’m a sucker for a warm comforting bowl of oats to start my morning off right. This batch of steel cut oats can feed a crowd or pack it up in jars and you’ve got breakfast for the week!
I like to keep it pretty simple so I didn’t add any extra sugars but, if you like your breakfast sweet, top it off with a drizzle of maple syrup, honey or agave syrup.
Store any leftovers in the fridge for up to a week or frozen for up to a month and gobbled up whenever you want! When you’re ready to eat it up, add a splash of milk and microwave for a minute or two until heated through.
Any liquid can be used to cook the oats but I love a mix of milk and water for an ultra creamy consistency! Try apple juice or orange juice for a boost of flavor in place of the water. The milk can be diary (whole milk is indulgent!) but coconut or almond milk are great options if you’re vegan or avoiding dairy.
Ok, let’s get to the best part… the toppings! Everything in my mind is better with topping and oatmeal is no exception! I went with my favorite, apple, almond butter, almond and a pinch of cinnamon but pile on some yogurt, fresh or dried fruit, jam or jelly, toasted coconut and of course that drizzle of maple syrup for your sweet tooth… you name it and it would probably be delicious stirred into these oats.

Ingredients
- Apple Cinnamon Steel Cut Oatmeal
- 1 1/2 cups steel-cut oats
- 1 very ripe banana, sliced
- 1 medium apple, peeled and chopped
- 1/4 cup almond butter
- 1 cinnamon stick
- 4 cups water
- 2 cups milk (almond, soy or dairy)
- Toppers
- Toasted sliced almonds
- Almond butter
- Sliced apples
- Ground Cinnamon
Instructions
- Combine the oats, banana, chopped apple, almond butter and cinnamon stick in a lightly greased 4- to 6-quart slow cooker with the water and milk. Cover and cook on low heat for 7 to 8 hours until most of the liquid is absorbed and the oats are fully cooked. Discard the cinnamon stick and give the oats a good stir. Serve the oatmeal with desired toppings.
- Store any leftover oatmeal in an airtight container in the fridge. Add a splash of milk and reheat when ready to eat.
