Ok, so you forgot that it’s Mother’s Day weekend, shame on you! I’m here to give you a delicious quick solution for a Mother’s Day brunch that will make you a hero!

There has been recent a craze for artisan toast. Seriously guys, it’s toast. I know, but once you try these souped up combos, you’ll understand what all the craze it about. They really are just fancy open-faced sandwiches on crunchy bread, but the magic is in the perfectly toasted base and well paired toppings. They’re delicious, easy and completely customizable.

Here are a few of my favorite tasty toasts….

Bacon and Avocado Toast:
Mayo + Spinach + Crispy Bacon + Avocado + Cracked pepper

Poached Egg and Parmesan Toast:
Coarse Mustard + Parmesan Cheese + Poached Egg + Green onions + Cracked Pepper

Cucumber Cream Cheese Toast:
Cream cheese + Cucumber + Red Pepper Flakes

Tomato and Mozzarella Toast:
Fresh Mozzarella + Tomatoes + Green Onions + Balsamic Vinegar

Radish and Whipped Butter Toast:
Whipped Peppered Butter + Sliced Radishes + Coarse Salt

Kimchi and Avocado Toast:
Smashed Avocado + Kimchi + Black Sesame Seeds

Ingredients

Scale 1x2x3x

• 1 thick slice bread
• 1 to 2 tablespoons spread (like mayo, mustard, whipped butter or smashed avocado)
• 2 to 3 tablespoons topping (like sliced radishes, sliced tomatoes or chopped kimchi)
• Pinch of garnish (like pepper, green onions, red pepper flakes, salt or sesame seeds)

Instructions

1. Toast bread in toaster until desired doneness. Add spread, topping and garnish as desired. Serve warm.
