This sweet potato hummus is brightly colored, sweet and spicy. Serve it with veggies, pita or crackers for a yummy appetizer or party dish.

Ingredients

2 sweet potatoes, peeled and diced (3 cups)
3 large carrots, peeled and diced (2 cups)
4 tablespoon olive oil
1/2 teaspoon salt
2 cloves garlic, with paper skins
4 tablespoons water
2 tablespoons spicy harissa sauce
2 tablespoons tahini
2 teaspoons fresh lemon juice

Instructions
Heat oven to 375°F. In medium bowl, toss sweet potatoes and carrots with 1 tablespoon of the oil and salt. Arrange sweet potatoes, carrots and garlic on ungreased large cookie sheet.
Roast about 40 minutes in oven, stirring once, until soft and caramelized.
Cool vegetables slightly. In food processor, add roasted vegetables and remaining hummus ingredients. Cover; process until smooth and well combined.
Serve hummus at room temperature topped with a drizzle of olive oil and fresh herbs and cut up veggies for dipping.
