Green beans are one of the unsung hero in the veggie world. They go great with everything from chicken, to ham, or turkey, or even tofu! They can be steamed, grilled, roasted, sautéed or battered and fried.
These beans are deliciously roasted to make them crisp-tender and are served with a mustard-garlic yogurt sauce to make them even more irresistible. With just 15 minutes to make, this recipe is perfect for a week night or a fancy side dish when entertaining guests.
The savory yogurt dressing has a bit of a kick from the mustard but is great to serve with any roasted veggie. The dressing can be made up to a day ahead and stored in the fridge to make it even faster to get dinner on the table!
Roasted Green Beans with Yogurt Dressing
Prep Time: 15 minutes
Start to Finish: 30 minutes
Roasted Green Beans
1/2 pound green beans, trimmed
1 tablespoon olive oil
1 clove garlic, finely chopped
1/4 teaspoon salt
Pinch of pepper
Yogurt Dressing
1/2 cup plain Greek yogurt
1 tablespoon milk
1 teaspoon mustard
1 teaspoon olive oil
1/4 teaspoon salt
Pinch pepper
Heat oven to 425°F. Line baking pan with parchment paper. In a medium bowl, toss green beans, olive oil, garlic, salt and pepper. Spread into a single layer on lined baking pan.
Bake 10 to 15 minutes or until crisp tender, stirring once.
Meanwhile, in a medium bowl, whisk together yogurt, milk, mustard, olive oil, salt and pepper until smooth.
Spoon green beans onto a serving platter, top with dressing.
Makes: 4 servings
