Seasonal roasted squash with Za’atar seasoning and a Tahini Yogurt Sauce; a flavorful and healthy side dish!

Roasted Za’atar Acorn Squash
1 medium acorn squash, unpeeled, halved, seeded and cut into 1/2 inch wedges
2 tablespoons olive oil
1 tablespoon Za’atar seasoning
1/4 teaspoon red pepper flakes
Pinch coarse Kosher salt
1 lemon, thinly sliced into 1/4-inch rounds
Tahini Yogurt Sauce
1/2 cup plain Greek yogurt
2 tablespoons tahini
2 tablespoons fresh lemon juice
1 clove garlic, finely chopped
Pinch coarse Kosher salt
Garnishes
1/2 cup chopped fresh parsley
Za’atar seasoning
Instructions
Heat oven to 425°F. In a medium bowl, toss the squash with the olive oil, za’atar, red pepper flakes and salt to coat.
Bake 30 to 35 minutes, turning squash and adding lemon slices halfway through, or until fork tender and browned.
Meanwhile, in a small bowl, stir together the yogurt, tahini, lemon juice, garlic and a pinch of salt. Stir in 1 to 2 tablespoons water if needed for drizzle consistency.
Arrange squash, lemons and parsley on a serving platter. Drizzle with tahini sauce and sprinkle with za’atar seasoning.
