This Rhubarb Shrub is bright refreshing drink made with a base of fruit, sugar and vinegar. Add it to sparkling water or mix it into a cocktail!
I know, I know, enough with the rhubarb already! But, if you guys saw the 5-gallon pail of rhubarb that I have to get through, you’d be adding it to everything too! I’ve wanted to make a shrub for a long time and this bumper crop of rhubarb is the perfect chance to give it a try.
A shrub is just a fruit-based sweetened vinegar syrup. It’s often served with sparkling water as a refreshing non-alcoholic drink.
If you’re looking for something a little stronger to sip on? A shot of gin or vodka stirred in would be awesome, or sparkling white wine instead of the sparkling water would work too. The tartness of the rhubarb works well with the sweetened vinegar but you can use any fruit in place of the rhubarb for a different flavor.

Ingredients
- 2 pounds rhubarb stalks, chopped (about 6 cups)
- 1 cup sugar
- 1 cup apple cider vinegar
- Flat or sparkling water
- Mint leaves
Instructions
- In a medium bowl, mix the chopped rhubarb and sugar. Cover and let stand in the fridge for 3 to 4 days, stirring every 12 hours. Place a strainer over a medium bowl and strain the rhubarb mixture by pressing the solids against the strainer. Stir the vinegar into the rhubarb mixture. Store in an airtight container in the fridge.
- To make a drink, pour 1 ounce rhubarb shrub over ice and top with flat or sparkling water. Garnish with fresh mint leaves.
Notes
In the mood for a cocktail? Spike it with a shot of gin or swap in champagne for the sparkling water.
