I swore that this year I would avoid all the pumpkin spice hub-bub. There are one too many #PSL’s and pumpkin infused or scented thingamajig’s around this time of year. Alas, with a super busy work week coming up and a chill in the air, I couldn’t resist adding pumpkin into these hearty breakfast cookies.
They’re packed with oats, pecans, dried cranberries and chia seeds for the perfect on-the-go oatmeal. It’s sweetened with honey, but only just a bit making it more breakfast than cookie, a delightful cookie that’s actually good for you!
