4 medium sweet potatoes
1 avocado, pitted and sliced
1/4 cup grape tomatoes, halved
1/4 cup chopped fresh cilantro
2 tablespoons sliced green onions
1 jalapeño or serrano chile, thinly sliced
2 tablespoons pepitas
1 lime, quartered
Instructions
Heat the oven to 375°F. Prick the skin of the sweet potatoes with a fork and place them on a baking pan. Bake about 1 hour, or until soft. Cool slightly, about 15 minutes. Cut the potatoes along the top to open and fluff with a fork. Top with avocado, tomatoes, cilantro, green onions, chiles, pepitas and a squeeze of lime.
