These burgers are super flavorful and delicious! They’re made with a mixture of ground lamb and pork for the perfect amount of fat and flavor.

Tzatziki Sauce
1 cup Greek yogurt
1 small cucumber, finely chopped
1 garlic clove, finely chopped
1 tablespoon finely chopped fresh mint
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
Pinch of salt and pepper
Lamb Burgers
2 teaspoons olive oil
1 medium shallot, finely chopped
20 ounces ground lamb
4 ounces ground pork
1 cup crumbled feta cheese
1 tablespoon Dijon mustard
2 teaspoons finely chopped fresh mint
2 teaspoons finely chopped fresh oregano
3 garlic cloves, finely chopped
2 green onions, chopped
Pinch of salt and pepper
Baby spinach
Chopped Kalamata olives
6 burger buns, split, toasted
Instructions
In a small bowl, stir together all sauce ingredients. Refrigerate until ready to serve.
In a medium skillet, heat 2 teaspoons olive oil over medium-high heat. Add the shallots and cook 6 to 7 minutes, stirring frequently or until browned. Set aside.
In a large bowl stir together ground lamb, ground pork, 1/2 cup of the feta, mustard, mint, oregano, garlic, green onions, salt and pepper until well blended. Form into six patties, about 3/4-inch thick; set aside.
Heat gas or charcoal grill to medium heat. Place patties on grill; cover grill. Cook 8 to 10 minutes, turning once, until desired doneness.
Meanwhile, in a small bowl, combine remaining 1/2 cup feta, arugula and olives. Serve burgers with tzatziki sauce and spinach mixture.
