Crispy, crunchy and totally addicting; these green bean fries are absolutely delicious! I’ve always liked green beans, but with a crunchy panko outside, I’d skip dessert to devour these veggies! Paired with a Lemon-Garlic Aioli? I’d skip dinner too!
I’m always hunting for a good appetizer to serve to friends and family when they pop over. Served up with a cold beer these fries are perfect for game day or even a weeknight dinner. They’re pretty quick to make and are better than what you’d get at a restaurant. You may as well make a double batch!
Green Bean Fries with Lemon-Garlic Aioli
Prep Time: 20 minutes
Start to Finish: 45 minutes
Lemon-Garlic Aioli
1/2 cup mayonnaise
1 clove garlic, peeled, crushed
2 teaspoons fresh lemon juice
1/4 teaspoon salt
Pinch freshly ground pepper
Green Bean Fries
1 lb fresh green beans, trimmed (I used a mix of green, yellow and purple)
2 egg whites, beaten
1 cup panko bread crumbs
1 cup grated Asiago or Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt
Pinch freshly ground pepper
In a small bowl, stir together Lemon-Garlic Aioli ingredients. Cover with plastic wrap; refrigerate until ready to serve.
Heat oven to 425°F. Line two large cookie sheets with parchment paper; set aside. Fill a 3 quart saucepan with salted water, bring to a boil. Once boiling, carefully drop in the green beans and cook for 3 to 4 minutes.
Meanwhile, prepare a large bowl with icy water. Remove the beans with tongs and plunge into the icy water. Remove and towel dry.
Place beaten egg whites in a shallow bowl. In another shallow bowl, stir bread crumbs, Asiago cheese, garlic powder, salt and pepper until well mixed.
Working in batches; coat the green beans in egg white, drain off the excess and toss in bread crumb mixture. Place in a single layer on cookie sheets.
Bake 15 to 20 minutes or until golden brown and green beans are crisp-tender. Do not turn or toss, just watch closely to prevent over baking. Serve with Lemon-Garlic Aioli.
