Focaccia bread is one of my favorite breads to make at home. It’s easy and great for sandwiches, pizza dough or paired with soup or a salad. This is a quick version that skips the kneading step and quickly gets you to a delicious pan of tasty bread.
Garlicky, herby and delicious, Focaccia bread is soft, rich and chewy and perfect for snacking.
One of the best parts of this bread is the smell coming from the oven while it’s baking. The rosemary, the garlic, the shallot, you won’t be able to keep your hands off it while it cools!
It might sound like a lot of oil, but it helps to keep the bread from sticking to the pan and gives it great flavor and texture.
If your pan tends to stick, oil the pan, add a layer of parchment paper and oil the parchment to make sure the bread won’t even have a chance to stick.

Ingredients
- 5 tablespoons olive oil, divided
- 1 1/2 cups warm water
- 1 1/4 teaspoons salt
- 3 1/2 cups all-purpose flour
- 1 tablespoon instant yeast
- 1/2 shallot, thinly sliced
- 1 clove garlic, thinly sliced

- When ready to bake, heat oven to 450°F. Firmly poke the dough all over with your index finger. Sprinkle the shallot, garlic, rosemary and salt on dough.
- Brush the top lightly with olive oil and place in the oven. Immediately, reduce the oven temperature to 375°F and bake 30 to 35 minutes or until golden brown.
