Roasted chickpeas are a go-to snack in my house. I nibble on them warm out of the oven or toss them on top of a salad for added flavor and crunch. They’re a blank slate to top with any flavor you can think of: sweet, spicy, savory, it’s all good! I especially love this combination of salt, pepper and garam masala.
Garam Masala is a blended spice mixture common in Indian cooking that is usually made up of cinnamon, nutmeg, cloves, cardamom, peppercorns, coriander and cumin. It adds a warm spiced flavor with a deep savory note. I purchased a pre made ground spice blend but you can easily make it from scratch using whole spices.
The best way to get crunchy roasted chickpeas is to rinse, drain and be sure to pat them really dry before tossing them in olive oil and seasoning. Getting rid of that extra moisture makes sure that they roast and not steam while in the oven.
Before roasting, you can rub the chickpeas with a paper towel to remove the skin. It doesn’t change much for the texture or flavor but they do look better without it.
Garam Masala Roasted Chickpeas
Roasted Chickpeas tossed in a mixture of garam masala, salt and pepper. An addicting snack and great topper for salads.

Ingredients
- 1 can (19 oz) chickpeas (garbanzo beans), drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon ground garam masala
- 1/2 teaspoon fine sea salt
- 1/8 teaspoon pepper
Instructions
- Heat oven to 400°F. Pat rinsed and drained chickpeas dry with a paper towel. Line a 10x15x1-inch baking pan with parchment paper.
- In a medium bowl, mix all ingredients until chickpeas are well coated in oil and seasoning. Spread in a single layer on baking pan. Bake 35 to 40 minutes, stirring after 20 minutes, or until browned and crispy. Cool completely, about 15 minutes.
