This appetizer is easy. I’m not just talking about the “dinner in 30 minutes or less” kind of easy. I’m talking about the “a gaggle of hungry friends stopping by for happy hour totally unannounced” type of easy.
Not only are these petite peppers super easy but they’re also totally tasty! They’re stuffed with a bit of hummus, spice and a little bit of cheese. The lemon and herbs give these bites a bright fresh flavor.
The peppers can be cut and the filling can be prepared up to a day ahead of time and assembled a few hours before serving. It’s a healthy snack or super easy appetizer that is sure to be a hit!
If you’re feeling spicy, try using jalapeños instead of the sweet peppers.

These cute stuffed peppers are a quick and delicious appetizer perfect for a party, happy hour or healthy snack.

Ingredients
- 1 1/2 pounds mini bell peppers, halved, seeds removed
- 1 container (7 ounces) red pepper hummus
- 1/2 cup crumbled feta cheese
- 2 teaspoons hot sauce
- 1/4 cup chopped parsley
- 3 tablespoons chopped green onions
- 1 tablespoon chopped mint
- 1 tablespoon lemon zest
Instructions
- Lay all of the peppers cut-side-up on a tray or baking sheet. In a medium bowl, stir together the hummus, feta and hot sauce. Spoon the hummus mixture into the center of each pepper half. Or spoon it into a resealable bag, cut the end and use it to quickly fill the peppers.
- In a small bowl, stir together the parsley, green onions, mint and lemon zest. Sprinkle the herbs over the peppers.Serve.
