What a weekend! I hope you all had a lovely weekend as well, because boy did we pack a lot of fun stuff into just a few days. I’ll share a recap of our adventures later this week. But today, you get to enjoy these cute little shortcakes!
As a kid, I had a favorite little doll named Strawberry Shortcake. Her clothes had little fruits drawn on them and her hair smelled of sweet plastic and artificial strawberries. I loved her. Ever since then, I’ve had a soft spot for strawberry shortcakes. They’re sweet, but not overly sweet and the biscuits are buttery, crumbly and pair perfectly with fresh whipped cream and lots of juicy fruits.
These shortcakes are made with just a few ingredients and can be whipped up at a moments notice. The strawberries can be swapped out for any fresh berry or seasonal fruit, like blackberries, peaches or even mangoes.
Strawberry Shortcakes
Prep time: 20 mins
Start to finish: 50 minutes
Strawberries
2 cups strawberries, trimmed and sliced
1 tablespoon sugar
1 teaspoon fresh lemon zest
Biscuits
1 1/2 cups self-rising flour
2 tablespoons sugar
2 tablespoons cold butter, cut into small pieces
3/4 cup heavy cream
1 egg, beaten
Sweet Cream
1 cup whipping cream
1 tablespoon sugar
1 teaspoon vanilla extract
In a medium bowl, stir together strawberries, sugar and lemon zest; set aside.
Heat oven to 375°F. Line a baking sheet with parchment paper. Set aside.
In the bowl of a food processor, combine the flour, sugar and butter. Pulse 5 to 8 times until the butter is broken up into small pieces. Add the milk to the flour mixture and process until the mixture forms a ball.
Turn dough out onto a well-floured surface. Press into an 8 by 6-inch rectangle about ½-inch thick. Fold rectangle in half. Use a 3 to 3 1/2-inch round biscuit cutter to cut five to six biscuits from dough, rolling and re-rolling dough as necessary to use up remaining dough. Brush biscuit with beaten egg.
Bake 20 to 25 minutes or until biscuits are golden brown. Cool 5 minutes.
Meanwhile, in a medium bowl, beat whipping cream, sugar and vanilla extract until stiff peaks form.
Split the shortcakes, fill with cream and strawberries. Serve immediately.

I always wanted a Strawberry Shortcake doll! Something about that fake, fake strawberry smell intrigued me. As a full grown adult, your fresh strawberry shortcakes are much more appealing.
