This flavorful and super Easy Smashed Cucumbers recipe is a great way to use up all that summer bounty of garden veggies!

1 English hothouse cucumber
Pinch of salt
3 green onions, thinly sliced
1 tablespoon unseasoned rice vinegar
2 teaspoons soy sauce
1 teaspoon finely chopped garlic
1 teaspoon toasted sesame seeds
1/2 to 1 teaspoon red pepper flakes
Sesame seeds, if desired
Instructions
Cut the cucumber in half lengthwise, then cut into quarters crosswise. Turn each piece skin side up and gently smash with a rolling pin or a wooden spoon until the cucumber begins to break apart. Cut into bite-size pieces. In a medium bowl, toss smashed cucumber with a pinch of salt. Refrigerate 10 minutes; drain excess liquid.
Toss with green onions, rice vinegar, soy sauce, garlic, red pepper flakes. Serve immediately, garnished with sesame seeds.
