We’ve been buried this week in fresh backyard veggies! With all the negative things going on in the world this week, a bumper crop of veggies is a welcome distraction. This is a *super* easy recipe that will use up some of your cucumber stash and help you get out a bit of aggression along the way!
Smashing the cucumber may seem a little weird but there’s a method to the madness. It helps to quickly get all that delicious flavor into the cucumber without having to soak them. Give it a light salting and let it chill for a bit to get rid of any excess liquid then toss it with whatever flavorful ingredients you and on hand. If you don’t have an English cucumber, the small Persian cucumbers are great, or peel the thick skin from pretty much any cucumber and you’re good to go! Happy smashing!
Easy Smashed Cucumbers
This flavorful and super Easy Smashed Cucumbers recipe is a great way to use up all that summer bounty of garden veggies!

- Total Time: 5 minutes
- Yield: 4 Servings 1x
Ingredients
- 1 English hothouse cucumber
- Pinch of salt
- 3 green onions, thinly sliced
- 1 tablespoon unseasoned rice vinegar
- 2 teaspoons soy sauce
- 1 teaspoon finely chopped garlic
- 1 teaspoon toasted sesame seeds
- 1/2 to 1 teaspoon red pepper flakes
- Sesame seeds, if desired
Instructions
- Cut the cucumber in half lengthwise, then cut into quarters crosswise. Turn each piece skin side up and gently smash with a rolling pin or a wooden spoon until the cucumber begins to break apart. Cut into bite-size pieces. In a medium bowl, toss smashed cucumber with a pinch of salt. Refrigerate 10 minutes; drain excess liquid.
- Toss with green onions, rice vinegar, soy sauce, garlic, red pepper flakes. Serve immediately, garnished with sesame seeds.
