I’m spilling all my secrets today! Well, not that secret, but I will give you this super easy roasted broccolini recipe. Ok, ok, it’s not really a secret but it does feel like I’m cheating when I make this because it is so darn easy!
This non-recipe, recipe is one of my main go-to dishes that we make it about twice a week. I’ve been getting a lot of requests for super quick and easy weeknight recipes so stay tuned for more ideas like this to come.
With so many ways to prepare vegetables, roasted (or grilled!) is by far my favorite. I love the roasty, toasty flavors and the way it can turn any vegetable into a super snackable candy. The trick is to give the veggie enough space on the pan and not crowd them so they roast and not steam. That will give you the little crispy browned bits that are so delicious!

- Cook Time: 15 minutes

Ingredients
- 1 pound broccolini or baby broccoli spears, trimmed, rinsed and patted dry
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- Pinch of salt and red pepper flakes
- Fresh lemon zest
Instructions
- Heat oven to 425°F. Place broccolini in an ungreased sheet pan. Top broccolini with oil, lemon juice, salt, red pepper and toss to coat.
- Bake 10 to 15 minutes or until fork tender. Garnish with lemon zest and serve.
