Sweet, slushy and perfectly boozy this Clementine Bourbon Slush is just as delicious in the middle of a snow storm as it is in the dog days of summer!
When I was a kid I used to beg my mom and dad to stay up late and watch the ball drop on New Year’s Eve. It seemed so magical! The throngs of people in New York City crowded around to celebrate the end of a year and the beginning of a new one. All the hooting and hollering and yes, even the smooching when the ball dropped, I wanted to be a part of all of it.
Now, yes, I will admit it, I’d prefer to gather with a handful of friends with a strong drink in hand and cheers to the new year someplace warm and cozy. Here in the midwest we usually get an ice storm or some nasty weather that just makes travel that much more treacherous. So, staying in is totally the sensible option. Right? Ugh, I’m so lame! But, as long as I’m old and boring at least I’ll have a great cocktail to cheers with when the moment comes.
The fresh clementine juice in this bourbon slush can be swapped out for your favorite seasonal citrus fruit. Grapefruit or even blood orange would be great options! The flavor combo of ginger, apple, citrus and bourbon is perfect for any fall or winter celebration but frozen drinks are also a hit in the dog days of summer.
Stirring the mixture every hour will break up the ice crystals as it freezes to give you the perfect slush texture. But, you can also use a high powered blender to get the slushy texture if you prefer. Just freeze the cider in an ice cube tray. When the cider is good and solid mix it with the remaining ingredients and blend until it becomes smooth. Serve it right away or store it in the freezer in an airtight container until you’re ready to party.
This boozy bourbon slush can be made up to 2 weeks ahead of time and stored in the freezer in an airtight container. With just a few ingredients, the hardest part of this recipe is patience while you wait for it to freeze.

Ingredients
- 4 cups apple cider
- 1 cup bourbon whiskey
- 2 cup ginger beer or ginger ale (divided)
- 1/2 cup fresh clementine juice
- Sliced clementine for garnish
Instructions
- Pour 4 cups of apple cider, bourbon, ginger beer and clementine juice together in a 13×9-inch baking dish (or pan). Carefully transfer the baking dish to the freezer and freeze solid, 4 to 6 hours stirring with a fork every hour until a slushy consistency.
- Divide between glasses and top off with a splash of ginger beer and a slice of clementine.
