These tender chocolate sandwich cookies are filled with a fluffy buttercream frosting for an irresistible take on the classic cookie but they’re so much better than the store bought option!
Pair these chocolate and cream bites with a mug of coffee or a glass of milk for an afternoon treat or pack them up for the most delicious holiday gift around.

Ingredients
- Chocolate Cookies
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1 2/3 cups all-purpose flour
- 1/2 cup unsweetened baking cocoa
- 1/8 teaspoon fine sea salt
- Buttercream Filling
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Heat oven to 350°F. In large bowl, stir 1 cup butter and 1/2 cup powdered sugar until well blended. Stir in flour, cocoa and salt until well mixed. If necessary, knead with hands to form a soft dough.
- Roll dough into small balls with 1 teaspoon of dough. Place 2 inches apart onto ungreased parchment lined cookie sheets. Flatten slightly.
- Bake 7 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
- Meanwhile, in large bowl, beat 1/2 cup butter with electric mixer on medium speed until well blended. Beat in 3 cups powdered sugar, milk, vanilla and salt on low speed until fluffy and creamy.
- Spread frosting between cookies.
