Roasted cauliflower with browned butter and fresh gremolata. An irresistible vegetarian side dish.

Cauliflower
1 tablespoon oil
1 head of cauliflower, leaves removed
1/4 cup butter, softened
1 teaspoon kosher salt
Gremolata
1/4 cup chopped parsley
3 tablespoons chopped green onions
1 tablespoon chopped mint
1 clove garlic
1 tablespoon grated lemon peel
Instructions
Heat oven to 425°F.
Brush oil over cauliflower. Place the cauliflower in a medium cast iron or oven-proof skillet. Roast the cauliflower for 45 minutes. Remove from the oven and spread the soft butter over the cauliflower; sprinkle with salt.
Roast the cauliflower for another 5 to 10 minutes or until cauliflower is tender and deep brown.
Meanwhile, in a food processor, place parsley, green onions, mint and garlic. Cover; process until finely chopped. Spoon mixture to small bowl; stir in lemon peel.
