As the fresh fall apples start hitting the farmers market stands and summer all but slips away, I’m finding that I’m actually giddy about the change. I’m excited for all the tasty seasonal recipes that I’ve set aside while I’ve indulged in the fresh fruit and veggies of summer. I’m ready to welcome the winter squash, root veggies, apples and pomegranates. But, the early sunset is already starting to cramp my style. What’s with the 7:30 sunset? I feel like mother nature is giving me a curfew!
As long as you’re snuggled in for the evening, let’s make a delicious apple-y dessert, eh?
I scooped up a few varieties of local apples the other day and knew I had to take advantage of the fact that it’s still National Bourbon and Honey month and create a twist on one of my favorite fall desserts; apple crisp.
Apple crisp is one of the easiest weeknight desserts since it can be thrown together in just a few minutes. But, with a few tricks, it can even be served with a giant scoop of ice cream as a simple crowd pleaser at a dinner party.
The key is to use a blend of sweet and tart apples to give a bit of variety in the texture and flavor. I love mixing granny smith with another baking apple like a braeburn. They’re both flavorful, perfectly sweet-tart and will hold their shape while baking. But, you really can’t go wrong, just use whatever apples you have on hand and it will still be delicious! The other thing to keep in mind with crisps is the apple to topping ratio. I tend to be a little heavy-handed with the topping. It is dessert after all and the crunchy topping is the best part so please don’t be stingy.
I kept the honey light in this recipe as crisps are often overly sweet. Serve this Bourbon and Honey Apple Crisp like I do with a drizzle of extra honey over the ice cream as desired or, add another tablespoon or two in with the apples if that’s more your style. Ingredients
- 4 medium baking apples peeled and chopped (about 4 cups)
- 2 tablespoons honey
- 2 tablespoons bourbon whiskey
- 1 teaspoon fresh lemon juice
- 1 1/2 cups quick cooking or old-fashioned oats
- 1/2 cup pecans, roughly chopped
- 1/4 cup butter, melted
- 3/4 teaspoon ground cinnamon
- Pinch of fine sea salt
- Vanilla ice cream and additional honey for serving
Instructions
- Heat oven to 375ºF. Grease the bottom and sides of a 2-quart baking dish. In medium bowl, toss the apples, honey, bourbon and lemon juice. Spread the apples in the baking dish. In medium bowl, stir oats, pecans, melted butter, cinnamon and salt until well mixed; sprinkle over apples.
- Bake about 25 to 35 minutes or until the topping is golden brown and apples are tender when pierced with a fork. Serve warm with ice cream and a drizzle of honey.

I think crisps are my favorite dessert, but I call them cobblers (which I know is inaccurate). There is just something about warm fruit with spicy crunchy bits!
