So many cocktails, so little time! You guys, my mint julep cups are getting a serious work out these days! I’ve been muddling fresh mint and a splash of bourbon with all sorts of fruity ingredients and I’m loving it!
With Cinco de Mayo and the Kentucky Derby on the same weekend, my liver is in need of a bit of a break! But, it’s a really good thing that tacos not only go great with margaritas but they pair perfectly with mint juleps too!
Not that you need a reason to enjoy a Mint Julep. But, with a cocktail that asks a punch like this one, it’s a good idea to make sure it’s paired with a hearty meal!
This tropical take on the traditional mint julep has a deep, roasty, toasty sweetness that you just can’t beat. The simple syrup is a sweet, fruity and minty to balance to this super boozy part of this cocktail. May the best cocktail taco horse win!
Bourbon and Honey Grilled Pineapple Mint Julep
This Pineapple Mint Julep is a tropical and refreshing twist on a traditional cocktail! It’s the perfect, slightly sweet and ultra boozy derby day drink!

Ingredients
Pineapple-Mint Syrup
- 1/2 cup honey
- 1/2 cup water
- 4 sliced grilled pineapple, cut into pieces
- 5 large fresh mint leaves
Pineapple Mint Julep
- 2 pieces grilled pineapple
- 2 large fresh mint leaves
- 1/2 ounce Pineapple-Mint Syrup
- 2 1/2 ounces bourbon
- Crushed ice
- Sprig of mint, for garnish
Instructions
To make the Pineapple-Mint Syrup, in 1-quart saucepan, mix honey, water and grilled pineapple pieces. Heat about 2 minutes over medium-high heat, stirring constantly until honey is dissolved. Use the back of a wooden spoon to muddle the pineapple chunks. Remove from heat; add the mint and set aside 1 hour to cool. Remove the pineapple pieces and mint; pour syrup into glass jar. Cover jar; refrigerate until ready to use. Makes about 1 cup.
Gently muddle the 2 pieces of pineapple and 2 mint leaves in the bottom of the glass. Add the Pineapple-Mint syrup, bourbon and some crushed ice; stir to chill the cocktail. Add more crushed ice and garnish with a sprig of mint and a grilled wedge of pineapple.
Notes
To grill the pineapple, trim the rind off of the pineapple; cut it into slices and remove the core to make rings. Grill over medium heat, turning once, 3 to 4 minutes of until there are caramelized grill marks on each side. Don’t have a grill or not grilling season? Heat up your grill pan and bring the action inside!
