Mix up these fresh Bourbon and Honey Ginger Fizz cocktails as a light, gingery drink that’s perfect for late summer or early fall!

Ginger Honey Syrup
1/2 cup honey
1/2 cup water
2-inch knob fresh ginger, sliced
Bourbon and Honey Ginger Fizz
1.5 ounces bourbon whiskey
2 teaspoons Ginger Honey Syrup
1 teaspoon fresh lemon juice
2 ounces ginger beer or club soda
Sliced lemons and candied ginger, for garnish
Instructions
In a 1-quart saucepan, mix honey and ginger. Heat about 2 minutes over medium heat, stirring constantly until honey is dissolved. Remove from heat; set aside 1 hour to cool. Discard the ginger slices. Pour syrup into glass jar, cover and refrigerate until needed. Makes about 1 cup.
In a cocktail shaker filled with ice, mix bourbon, Ginger Honey Syrup and lemon juice.
Shake until well chilled. Strain into ice filled glass and top with ginger beer. Garnish with fresh lemon slices and candied ginger if desired.
