Bourbon and Honey Cherry Filling
1/2 cup honey
3 tablespoons bourbon whiskey
1 tablespoon cornstarch
2 tablespoons fresh squeezed orange juice
Few dashed bitters
1 tablespoon finely grated orange zest
6 cups frozen sour cherries, thawed and drained
Crumble
1/3 cup all-purpose flour
1/3 cup brown sugar
1/2 teaspoon coarse kosher salt
1/3 cup butter, cut into small pieces
3/4 cup old-fashioned oats
1/3 cup sliced almonds
Whipped cream or ice cream, if desired
Instructions
Heat oven to 350°F. Grease or butter a 6 or 8-inch cast iron skillet.
In a large bowl, stir together honey, bourbon, cornstarch, orange juice and orange zest until blended. Add the cherries; toss until evenly coated. Spoon into the prepared skillet.
In the same bowl, mix the flour, brown sugar and salt. Cut in the butter, using a pastry blender (or a fork), until mixture looks like coarse crumbs. Stir in oats and almonds. Sprinkle crumble mixture over cherries in skillet.
Bake 30 to 40 minutes or until topping is golden brown. If desired, serve with whipped cream or ice cream.
