Balsamic Vinaigrette
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon whole grain Dijon mustard
1/2 teaspoon honey
Salt and pepper, to taste
Blueberry, Quinoa and Spinach Salad
3/4 cup uncooked quinoa
4 cups baby spinach
2 cups blueberries
1/2 cup crumbled goat cheese
1/4 cup thinly sliced fresh basil
1/4 cup sliced almonds, toasted
Instructions
In a medium bowl, whisk together the olive oil, vinegar, mustard, honey, salt and pepper; refrigerate until ready to use.
Cook quinoa according to package directions, cool to room temperature. In a large bowl, toss together the dressing, quinoa, spinach and blueberries until well mixed. Garnish with goat cheese, basil and almonds.
