YAY it’s finally socially acceptable to eat pizza for breakfast. Ok, so yeah, I’ve been doing it all along and can’t judge you for eating that cold slice of pizza from last night standing in front of the fridge with the door open. I’ve totally been there too! Now you can have all the flavors of your favorite brunch piled on a pizza crust and it is so. dang. good. and I can’t wait to share it with you!!
Start with your favorite pizza crust. You can go with scratch or my favorite shortcut, the fresh dough balls in the deli of my local grocery store. They taste like homemade and are usually available in wheat, white or garlic – yum!
The trick when adding eggs to a pizza is to partially bake the crust before adding the eggs. If you want perfectly runny eggs, you’ll need to add them towards the end of the bake time. The dough will puff and rise as it bakes so, making little indents in the crust (and toppings) before baking, then again right before adding the eggs will make sure you have enough room for the entire egg to nestle into the pizza and not spill out over the side of the crust.
See how perfectly those eggs are snuggled right in there? And that melty burrata cheese? Ugh, I can’t even handle it! Brb, I’m going to go make another pizza!

Ingredients
- 1 ball (14 ounces) of fresh pizza dough (or your favorite pizza crust)
- 4 slices thick cut bacon, chopped and cooked until crispy
- 1 teaspoon olive oil
- 6 ounces baby spinach (about 3 cups)
- 2 cloves garlic, finely chopped
- 1/2 cup freshly grated Parmesan cheese
- 2 green onions, thinly sliced
- 1/2 teaspoon red pepper flakes
- Pinch of salt
- 1/2 cup pizza sauce
- 2 balls of burrata cheese
- 3 to 4 large eggs
- Sliced green onions for garnish
Instructions
- Place the dough on the floured surface, let stand about 15 minutes to come to room temperature.
- In a medium skillet, heat the olive oil over medium heat. Add the spinach and garlic to the skillet and cook, stirring frequently 1 to 2 minutes or until just starting to wilt. Transfer the spinach to a fine mesh strainer and press out as much liquid as you can. Once most of the liquid has been removed, chop the spinach into small chunks.
- In a small bowl, stir together the chopped spinach, parmesan cheese, green onions, red pepper and salt; set aside.
- Heat oven to 425°F. Line a half sheet pan with parchment paper and sprinkle with a bit of flour or cornmeal. Place the dough on the parchment paper and press out into the pan. If the dough is difficult to work with, let it rest for another 10 minutes and try again.
- Spread the pizza sauce evenly over the dough. Top with the spinach mixture and bacon. Pull apart the balls of burrata and evenly disperse it over the pizza. Use the back of a spoon to make 3 indents in the pizza toppings for the eggs but don’t add the eggs yet.
- Bake 7 to 10 minutes or until lightly browned and the crust is set. Remove the pizza from the oven. Use the back of a spoon to reform the indents to make room for the eggs. Crack the eggs individually into a small bowl and carefully transfer to the indents in the pizza trying to keep the entire egg in the indent. Return pizza to oven and bake an additional 5 to 7 minutes or until the eggs are softly set and the crust is golden. Garnish with additional green onions, if desired.
