1/2 medium red cabbage, thinly sliced (about 4 cups lightly packed)
1 large firm tart apple, thinly sliced
1 small bulb fennel, finely sliced
3/4 cup pomegranate seeds
3 tablespoons chopped fresh mint
2 tablespoons finely sliced green onions
2 tablespoons chopped fresh parsley
2 tablespoons olive oil
2 tablespoons apple cider vinegar
2 tablespoons fresh lime juice
1/4 teaspoon salt
Pinch fresh pepper
Instructions
In a large bowl, combine the cabbage, apple, fennel, pomegranate seeds, mint, green onions and parsley. In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, salt and pepper. Pour the dressing over the cabbage mixture and toss to coat.
