Have you had a chance to crawl out of your Thanksgiving food coma yet? I’m still enjoying a lazy Sunday with family, wishing I could squeeze another day or two out of this long weekend.
To help pull me out of my tryptophan induced slump, I’ve whipped up a light, fresh mix of veggies. Just what ya need to declog those arteries from last weeks festivities!
This apple and cabbage slaw is super bright, colorful and full of fresh flavor. Toss in some left over turkey and a few handfuls of mixed greens for a festive salad or pile it on top of sandwiches, tacos or whatever dish you might be making this week.
The fresh mint, fennel and pomegranate seeds give it a bit of a holiday flavor but swap in blueberries or raspberries for the pomegranate and you can easily serve this slaw all year long.

Ingredients
- 1/2 medium red cabbage, thinly sliced (about 4 cups lightly packed)
- 1 large firm tart apple, thinly sliced
- 1 small bulb fennel, finely sliced
- 3/4 cup pomegranate seeds
- 3 tablespoons chopped fresh mint
- 2 tablespoons finely sliced green onions
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
- Pinch fresh pepper
Instructions
- In a large bowl, combine the cabbage, apple, fennel, pomegranate seeds, mint, green onions and parsley. In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, salt and pepper. Pour the dressing over the cabbage mixture and toss to coat.
