Frozen, boozy and super summery, these Bourbon and Honey spiked Strawberry Mint Julep Popsicles are going to be a keeper!
Let the count down begin, it’s almost derby day! I’ve never been to the Kentucky derby and I don’t own a giant floppy hat but I do know one thing, mint juleps are awesome. How could an ultra boozy adult slushy ever be a bad thing? But, this isn’t just a boozy slushy though, it’s the ultimate adult popsicle!
These frozen pops start with a minty, sweet, strawberry and honey mixture then they get a healthy dose of bourbon! The base is sort of like the simple syrup part of the traditional mint julep and made even more sweet and fruity with strawberry.
The high bourbon content makes these tasty strawberry mint julep popsicles (awesome! and…) a little quicker to melt so serve them up in a julep cup. If it starts to melt on you… eat it faster, just watch out for the brain freeze!

Frozen, boozy and super summery, these Bourbon and Honey spiked Strawberry Mint Julep Popsicles are going to be a keeper!
- Prep Time: 10 minutes
- Cook Time: 8 hours
- Total Time: 8 hours 10 minutes
- Yield: 10 popsicles 1x
Ingredients
- 2 cups water
- 1 cup honey
- 4 strawberries, sliced
- 1 cup fresh mint leaves
- 1/3 cup bourbon whiskey
- 5 small strawberries, sliced
- 20 small fresh mint leaves
Instructions
- In a 2-quart saucepan, stir together 2 cups water, 1 cup honey and 4 sliced strawberries. Heat over medium-high heat, about 2 minutes, stirring constantly to dissolve the honey and use the back of a wooden spoon to smash the strawberries.
- Remove from heat; add 1 cup fresh mint leaves and set aside 1 hour to cool. Strain the syrup into a glass jar; discard solids. Stir in the Bourbon.
- Divide the remaining strawberries and mint leaves among 10 popsicle molds. Pour the liquid mixture evenly between popsicle molds. Place sticks in popsicle molds. Freeze 8 hours, or until firm.
- To remove popsicles, run warm water on the outside of the popsicle form until it releases.
