Quick, spicy and totally delicious, these Szechuan Green Beans are the perfect side dish for a dinner party or a weeknight dish.
We don’t eat out very often but when we do, I love to get a bunch of little apps or sides to share with the table. That way you get to try a little bit of everything without getting ‘order envy!’
We have a great restaurant near our house with tons of great veggie side dishes like cauliflower steaks, beet hummus, shishito peppers and spicy roasted green beans and I can never get enough! The green beans are a crowd favorite since they’re just spicy enough to warm you up but not start your mouth on fire!
These spicy Szechuan green beans are my take on one of those restaurant favorites. There easy, spicy and totally satisfying! Szechuan peppercorns can be found at most Asian grocery stores or online. Be sure to sift through the peppercorns to remove and discard any sticks, stems or black peppercorn before crushing them.
These green beans are quickly cooked under the broiler for just a few minutes to blister the skin and make them tender. Not my normal process but I loved the way they turned out, perfectly tender with some deliciously crispy bits.

Ingredients
- 2 tablespoons peanut or vegetable oil
- 1/2 teaspoon whole Szechuan peppercorns, toasted and crushed
- 2 tablespoons garlic, finely chopped
- 2 tablespoons soy sauce
- 1 tablespoon grated fresh ginger
- 1 teaspoon chili paste
- 1/2 teaspoon sugar
- 1 1/2 pounds green beans, trimmed
- 2 green onions, thinly sliced
Instructions
- In a medium skillet over medium-low heat, cook 1 tablespoon of the oil and the crushed peppercorns stirring frequently about 1 minute, or until fragrant. Add garlic, soy sauce, ginger, chili paste and sugar and cook an additional 1 minute until sugar is dissolved; set aside.
- Heat oven to broil and adjust the oven rack to the highest position. In a large bowl, toss green beans with remaining 1 tablespoon oil and arrange in a single layer on a baking pan. Broil 2 to 5 minutes, or until blistered and lightly charred.
- Spoon the ginger, garlic and peppercorn mixture over the green beans and toss to coat. Serve garnished with green onions.
