This year I’m aiming to create more recipes that are flavorful and delicious but also not a huge pain in the butt because let’s be real, not everyone enjoys spending as much time in the kitchen as I do. I totally get that. I do spend a lot of time cooking, baking and experimenting but when it comes down to the ever-present question of ‘what’s for dinner?’ I’m often just as befuddled as everyone else. Yes, I used the word befuddled. I’m trying to get it to catch on, you should use it too!
Figuring out what’s for dinner doesn’t have to be hard though. Once you’ve figured out a handful of recipes that you and your family love that just take moments to throw together it’s actually way more satisfying than takeout from down the street. Your slow cooker will help if you’ve planned ahead but when you’re already starting to get hangry, it just won’t cut it. That’s where simple quick cooking meals come in to save the day.
Shrimp is the best kept secret for quick meals. It can be stored in the freezer and quickly thawed. But, it takes just a few minutes to cook so as soon as the table is set, dinner is ready!
The title says it all, this shrimp is pretty spicy but, feel free to mix it up and use whatever spices and seasoning you have on hand that your family loves. Old Bay seasoning would be great, just remember that it’s pretty salty so you can skip the extra salt. If you think of it and have a minute in the morning, toss everything together and let it marinate while you’re at work so you can skip a step when you get home. Ditch the rice and toss these spicy shrimp in a tortilla for lightning fast tacos or serve on a pile of greens for a hearty salad. However you serve it, keep it simple and remember that dinner doesn’t have to be complicated to be delicious!

- Total Time: 15 minutes
- Yield: 4 Servings 1x
Ingredients
- 1 cup uncooked white rice
- 1 pound raw shrimp, peeled and deveined (thawed and patted dry if frozen)
- 1 tablespoon olive oil
- 1 clove garlic, finely chopped
- Pinch ground chili powder, cumin, cayenne pepper, salt and pepper
- Fresh parsley, for garnish
Instructions
- Cook rice according to package directions.
- Meanwhile, In a medium bowl, toss together the shrimp, olive oil, garlic, chili powder, cayenne, salt and pepper; to coat evenly. Marinate for 10 minutes or up to 8 hours.
- Heat the skillet over medium heat until thoroughly heated. Add the marinated shrimp and cook, tossing occasionally for 4 to 5 minutes or until cooked through. Add a tablespoon or two of water or stock to create a sauce.
- Serve shrimp over rice with the sauce, garnished with parsley.
