It’s super cheesy but I like Arnold Palmers. Not the Arnold Palmer, I really don’t know much about him except that he was an amazing golfer. But, the drink? Yep, that’s more up my alley. Perfect for summer, the tea and lemonade mix is refreshing, cool and delicious.
This is a more modern, more fresh, more fruity and yeah, more delicious version of an Arnold Palmer. I was on another shopping adventure at Whole Foods, looking for something new and found a fruity ice tea that I thought would make a tasty cocktail.
This cocktail looks complicated with all the parts but really, it’s just iced tea ice cubes, lemonade and process. The ice cubes can be made up to a few weeks ahead, in a pinch you can use a nice purchased lemonade and the prosecco can be replaced with anything sparkly. For a non-alcoholic version, you can replace the prosecco with ginger beer or even club soda.
Spiked Hibiscus Arnold Palmers
Prep Time: 15 minutes
Start to Finish: 4 hours 45 minutes
Tea Ice Cubes
1 Blueberry Hibiscus Ice Tea Bag
4 cups water
Lemonade
2/3 cup sugar
1 cup water
1 cup fresh lemon juice
2 cups cold water
Garnish and Sparkly
Lemon slices
Fresh blueberries
Prosecco or ginger beer or club soda
Brew tea according to package directions. Cool slightly; pour into ice cube trays. Freeze 4 hours or overnight, until completely frozen.
In a 2 quart saucepan, heat sugar and 1 cup water over medium heat 1 to 2 minutes or until sugar is dissolved. Refrigerate until chills; about 30 minutes.
In a pitcher, add cooled sugar mixture, lemon juice, cold water, lemon slices and blueberries. Refrigerate 30 minutes to chill.
To serve, fill glasses with tea ice cubes and lemon slices. Add lemonade to fill glasses half full. Top off with something sparkly and garnish with blueberries.
