I’ll be peppering you all month with reasons to celebrate #BourbonandHoney month because, why not? So let’s get started with a super easy grilled chicken recipe, eh? Heck yeah, everyone love chicken! This one is an awesome make-ahead recipe. Just throw everything together in a ziplock bag, stash it in the freezer while you’re at work and grill these bad boys up when you get home for the easiest dinner on the block. Serve it with rice, grilled veggies or a pretty green salad and you’ve got dinner in no time at all.
Cilantro lime is one of the best flavor combos around but add bourbon and honey and it’s even better. I love the way the sweet honey gives the chicken a bit of extra browning and the bourbon, well that flavor is always a bonus!

This make-ahead Bourbon and Honey Cilantro Lime Chicken is a flavorful twist on an old favorite and perfect for a weeknight dinner or weekend party!

Ingredients
- 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
- 1 cup cilantro, chopped and additional for garnish
- 2 limes zested and juiced
- 1/4 cup honey
- 2 tablespoons bourbon whiskey
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 3 garlic cloves, roughly chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Serve with lime wedges and fresh cilantro
Instructions
- Place chicken in a ziplock bag. In a medium bowl combine cilantro, lime zest, lime juice, honey, bourbon, soy sauce, olive oil, garlic, cilantro, salt and pepper. Pour into a blender and blend until smooth. Pour the sauce over the chicken and seal the bag. Marinate in the fridge at least 3 hours or overnight.
- Heat up a gas or charcoal grill. Place the chicken on the grill over medium heat. Cover the grill; cook 12 to 15 minutes, turning once and brushing with remaining marinade, until the juice of the chicken is clear when center of thickest part is cut. Serve with lime wedges and fresh cilantro.
