If you haven’t figured it out by now, I have a sweet spot for sweet potatoes. They’re filling, delicious and are yummy either sweet or savory! These baked sweet potatoes are one of my go-to weeknight meals or make for a great brown bag lunch.
I usually use whatever leftover veggies I have on hand as a tasty topper, but this time I went for a few simple and flavorful standby’s. Topped with avocado, tomatoes, herbs, chiles and a squeeze of lime, these sweet potatoes are almost irresistible! Serve your ‘tater over mixed greens or spinach for a delicious and filling meal.

Ingredients
- 4 medium sweet potatoes
- 1 avocado, pitted and sliced
- 1/4 cup grape tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 2 tablespoons sliced green onions
- 1 jalapeño or serrano chile, thinly sliced
- 2 tablespoons pepitas
- 1 lime, quartered
Instructions
- Heat the oven to 375°F. Prick the skin of the sweet potatoes with a fork and place them on a baking pan. Bake about 1 hour, or until soft. Cool slightly, about 15 minutes. Cut the potatoes along the top to open and fluff with a fork. Top with avocado, tomatoes, cilantro, green onions, chiles, pepitas and a squeeze of lime.

Great question! Yes, you can absolutely eat the skin of a sweet potato! Give them a good scrub before baking just to make sure they’re really clean. Some people prefer not to eat it but I love it and it adds a bit of fiber to your diet too. Enjoy!
