As a kid, we used to take road trips to the West Coast in an old VW bus. Our favorite road trip snack was always a fresh bag of cherries from the road side market. Bing, Rainier or sour cherries, we ate so many that our fingers were stained for days!These days, I try to make the most of the short cherry season by preserving them in my two favorite things; bourbon and honey! Serve these boozy cherries in a Manhattan or spoon them over ice cream for a spiked sweet treat.

Stir these bourbon spiked cherries into your favorite drink or spoon them over ice cream for a boozy treat.

Ingredients
- 1 cup bourbon whiskey
- 1/2 cup honey
- 1/4 cup water
- 1 vanilla bean, split lengthwise
- 1 pound cherries, pitted
Instructions
- Combine the bourbon, honey, water and vanilla bean in a small saucepan. Place over low heat, whisking constantly, heat (but do not boil) until the honey dissolves, about 5 minutes.
- Place the cherries in two pint jars and pour the bourbon mixture over the top. Cool completely, cover and refrigerate at least 2 weeks before using and store in the fridge for up to 3 months.

How long do you leave these in the refrigerator before you start using them? Not sure what the optimal soak time would be. They sound amazing!

Great question Jen! You can sneak a few cherries after just a week in the fridge but they’ll be at their best after 2 weeks.
