Slightly sweet and super fruity, these pretty pink Strawberry Rhubarb Frozen Pops are frosty, easy and a super refreshing treat in the heat of summer!
I don’t know about you guys, but I am so utterly and completely uninterested in turning on my oven right now. These hot summer days are really best for no-bake snacks, cool salads and frosty pops. So, I’ve swapped my cookies and baked treats for some seriously delicious frozen sweets.
These yummy frozen treats are strawberry sweet and rhubarb tart. I kept these pops pretty tart because I love that rhubarb bite. So feel free to up the sugar slightly until you get exactly the flavor that you want.

Ingredients
- 2 cups strawberries, stems removed and cut in half
- 3 cups rhubarb (about 3 stalks), cut into 1/2 inch pieces
- 2 cups water
- 1/2 cup sugar
- 1 tablespoon fresh lime juice
Instructions
- In a saucepan over medium heat, combine the strawberries, rhubarb, water and sugar. Bring to a simmer and cook for about 15 minutes, stirring frequently. Remove from the heat, stir in lime juice and set aside to cool slightly.
- In a blender, process until smooth. Divide the mixture evenly between popsicle molds or paper cups. Place sticks in popsicle molds. Freeze 8 hours, or until firm.
- To remove popsicles, run warm water on the outside of the popsicle form until it releases.
