You guys, what is going on? It’s officially spring. But, right now? It’s chilly and snowing!
Since we’re having a little snow day pity party over here, I figured we could all use a hearty bowl of soup. It’s the perfect spicy meal to warm ya up during this cold weather. This big bowl of comfort is packed with kale, potatoes and spicy sausage.
The spicy sausage gives this soup a bit of a kick so if you can’t handle the heat, then replace it with sweet or traditional pork sausage. I love the creaminess of the milk and half-and-half but you can skip that too and just use more stock for a lighter meal. Serve it up with some warm French bread for a seriously satisfying meal.

Ingredients
- 1 pound bulk spicy Italian sausage
- 6 small red potatoes, cut into 1/2-inch pieces
- 1 cup chopped onion
- 2 cloves garlic, finely chopped
- 1 sprig fresh thyme
- 1 bay leaf
- 1/4 teaspoon salt
- Pinch of pepper
- 3 cups chicken stock or broth
- 4 cups chopped kale
- 2 cups half-and-half
- 1 cup whole milk
Instructions
- In 3-quart saucepan or Dutch oven, cook sausage over medium-high heat 6 to 8 minutes, stirring frequently, until no longer pink. Drain well on paper towels; set aside.
- In same saucepan, mix potatoes, onion, garlic, thyme, bay leaf, salt, pepper and chicken stock. Heat to boiling. Reduce heat to low; cook uncovered about 10 minutes, stirring occasionally.
- Stir in sausage and kale. Cook 5 to 10 minutes, stirring occasionally, until potatoes and kale are tender. Stir in half-and-half and milk; cook just until heated through, about 5 minutes.
