I’m a blurry eyed mess in the morning. A snarled pile of hair on top of my head, mumbling like a zombie and shuffling around the house. Honestly, it’s pretty pathetic. A nice big cup of coffee helps to bring me back to life every morning. In the summer, that hot cup of coffee turns into an icy cold brewed coffee with a splash of cream.
It’s even faster than making a keurig cup. Make a single batch of cold brew and you’re set for the week. Say good-bye to your barista and hello to another 5 minutes of sleep!
Cold Brewed Coffee with Vanilla Coconut Cream Ice Cubes
Cold brewed coffee sweetened with ice cubes made from sweetened condensed milk, coconut milk and a vanilla bean. It’s highly caffeinated, creamy and smooth.

Ingredients
- 1 can (13.5 oz) coconut milk (not cream of coconut)
- 2/3 cup sweetened condensed milk (from 14-oz can)
- 1 vanilla beans, each cut in half lengthwise
- 2 cups coffee grounds (medium grind)
- 9 cups cold water
Instructions
- In a medium bowl, beat coconut milk and sweetened condensed milk with a whisk until smooth. Scrape vanilla bean seeds into bowl; whisk until well blended. Divide mixture among ice cube tray. Freeze about 6 hours or until frozen.
- Place coffee grounds in a large glass container. Stir in cold water. Cover and refrigerate 24 hours. Strain coffee through fine mesh strainer. Strain again through coffee filter or cheesecloth; discard grounds. Place coffee concentrate in the fridge and allow to chill.
- Fill a glass full of ice cubes and 2 to 3 Vanilla Coconut Cream ice cubes. Fill glass with coffee concentrate and an equal amount of water. As ice cubes melt, stir coffee to swirl in flavor.
