Saint Patrick’s day means that spring is coming! It’s the time of year when chilly Minnesota finally begins to thaw. We all groggily shuffle out our houses to get some fresh air and stretch our legs at the Twin Cities 7K, called Get Lucky! Really though, Saint Patrick’s day is all about drinking too much green beer and eating lots of potatoes, but these aren’t just any potatoes, they’re tater tots!
These tatchos (tater tot + nachos) are covered in cheese, smoked bacon, green onions and a delicious horseradish aioli. They’re awesome for snacking, as an appetizer or a midnight snack!

These delicious Tater Tot Nachos are cheesy, bacon-y and delicious! They’re the perfect appetizer for a Saint Patrick’s day party!

Ingredients
- Tater Tot Nachos
- 1 package (12 oz) thick cut apple wood bacon
- 1 bag (16 oz) frozen tater tots
- 1 cup shredded sharp cheddar cheese
- 1/4 cup sliced green onions
- Horseradish Aioli
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream
- 1 tablespoon prepared horseradish
- 1/8 teaspoon salt
- Pinch pepper
Instructions
- Heat oven to 425°F. Line baking pan with parchment paper. Place wire rack on top of baking pan. Arrange bacon in single layer on top of rack. Bake 10 minutes. Turn bacon over; bake 10 to 15 minutes longer or until crispy. Remove from rack. Cool 5 minutes, cut into bite-sized pieces; set aside.
- Place tater tots on a baking sheet and bake for 25 minutes. Remove tots from the oven and sprinkle 1 cup cheese and bacon pieces over the tots. Bake for an additional 5 minutes, or until cheese is melted.
- Meanwhile, in a small bowl, stir together aioli ingredients until smooth; set aside until ready to serve.
- Garnish tots with green onions and a drizzle of horseradish ailoi. Serve immediately.
