I’ve never been big on Valentine’s day. It’s expensive, overrated and always a let down. I much prefer to make each day special and celebrate the small things instead of going overboard for a specific day.
Skip the expensive evening out and plan a romantic date night at home for Valentine’s day or a random Tuesday night. This recipe is quick, easy and a great way to help you celebrate whatever, or whoever it is that you’re celebrating.

This spicy pappardelle pasta topped with sausage, goat cheese and mushrooms is the perfect quick and easy date night meal.

Ingredients
- 1 pound bulk spicy pork sausage
- 1/2 cup dry white wine
- 2 cloves garlic, finely chopped
- 1/2 cup finely chopped shallots
- 1 package (8 ounces) baby portabella (cremini) mushrooms, thinly sliced
- 2 teaspoons fresh thyme
- Pinch red pepper flakes
- 1 cup chicken stock
- 2 tablespoons butter
- 8 ounces uncooked pappardelle pasta (or linguini)
- 1/2 cup cherry tomatoes, cut in half
- 1/4 cup soft goat cheese, crumbled (2 oz)
- 1/4 cup chopped parsley
Instructions
- In a large skillet over medium heat, add the sausage, breaking it apart into small pieces. Cook 5 to 8 minutes, stirring occasionally, until lightly browned.
- Reduce the heat to medium-low, add the wine, garlic, shallots, mushrooms, thyme and red pepper flakes. Cook 3 to 4 minutes or until the wine is reduced by about half. Add the chicken stock and butter and cook an additional 3 to 5 minutes or until the mixture is reduced by half.
- Meanwhile, bring a large pot of salted water to a boil over medium-high heat. Cook the pasta as directed on the package until al dente; drain. Add the pasta to the skillet with the sauce; toss to coat.
- Transfer to a large serving bowl, top with tomatoes, goat cheese and parsley. Serve immediately.
Notes
Italian pork sausage can be used in place of the spicy sausage for a milder meal.
