I’m not a huge football fan but I do love an excuse for a party and loads of tasty snacks. This dip is the king of all party dips! It’s a little bit beer, a little bit buffalo, a little bit spicy, and lots of cheese!
The best part is that you can make the dip up to a day ahead. Just pop it in the oven before your party guests arrive for a delicious crowd-pleasing appetizer. What game are we watching again?

The perfect game day dip, this Beer Cheese Buffalo Chicken Dip is spicy, cheesy and guaranteed to be a crowd pleaser!

Ingredients
- 8 ounces IPA beer
- 3 cups shredded mozzarella cheese
- 3/4 cup crumbled blue cheese
- 2 packages (8 ounces each) cream cheese, softened
- 3/4 cup original hot sauce (I used Franks)
- 2 cups shredded rotisserie chicken
- Pretzels, tortilla chips, celery sticks
Instructions
- Heat oven to 350ºF. In a medium saucepan, heat the beer over medium-low heat. Simmer until reduced to 1/2 cup, about 5 minutes.
- In a small bowl, stir together 1/2 cup of the mozzarella cheese and 1/4 cup of the blue cheese; set aside.
- Into the bowl of a food processor, add the cream cheese , remaining 2 1/2 cups of mozzarella cheese, remaining 1/2 cup crumbled blue cheese, hot sauce, reduced beer. Process until well blended. Pour the cheese mixture into a 2 to 3-quart baking dish, stir in the chicken.
- Bake until heated through and cheese is bubbly, about 15 minutes. Sprinkle with reserved cheese mixture. Return to oven and bake an additional 10 minutes or until cheese is melted and bubbly. Serve warm with pretzels, tortilla chips and celery sticks.
