Pudding for breakfast is perfectly acceptable (and totally indulgent!) when it’s made with yogurt, chia seeds and lots of tasty toppings. And that is a good thing because I have a big sweet tooth. It’s more like a sweet molar actually. I can’t help but reach for something sweet especially late morning when breakfast has worn off.
Chia pudding is delicious! It keeps my sweet tooth in check and holds me over until lunch all while being healthy and super easy.
Banana-Almond Chia Pudding Bowl
Prep Time: 5 minutes
Start to Finish: 24 hours 5 minutes
1 cup plain greek yogurt
1/2 cup almond milk
3 tablespoons chia seeds
1 tablespoon honey or agave nectar
1/2 banana, sliced
1 tablespoon sliced almonds
2 tablespoons unsweetened shaved coconut
1 teaspoon chunky peanut butter or almond butter
In a medium bowl, mix together yogurt, milk, chia seeds, and honey. Cover and refrigerate overnight. Spoon into bowls and top with banana slices, almonds and coconut. Stir in peanut butter and serve.
