My Grandma was always known for her amazing baking skills. She loved to experiment by stirring healthy ingredients like flax-seed, oats and wheat germ into all her baked goods. Not always what a kid wants in their chocolate chip cookie or peanut butter bars. But, her banana bread was a family favorite, even when it was randomly boosted with extra fiber!
This banana bread? Nope, it’s not her famous recipe. I’ve skipped the bonus healthy stir-in and added in my favorite ingredient; bourbon! She’d probably appreciate a spiked version of her favorite bread but I’m sure she would have sprinkled in a few flax-seeds and a handful of wheat germ for good measure.
Bake it up, slice it up and top it with butter for a great bourbon spiked breakfast with coffee, or serve it toasted for an afternoon snack or treat. Your Grandma will be proud!

Ingredients
- 1 1/4 cups sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 cups mashed very ripe bananas (3 to 4 medium)
- 1/4 cup buttermilk
- 3 tablespoons bourbon
- 2 teaspoons vanilla
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup toasted chopped pecans, if desired
Instructions
- Move oven rack to low position so that the top of the pan will be in the center of oven. Heat oven to 350°F. Grease bottom only of 9×5-inch loaf pan.
- Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk, bourbon and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in chopped pecans. Pour into prepared pan.
- Bake 1 hour 15 minutes to 1 hour 20 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of the loaf from pan; remove from pan and place on wire rack. Cool completely, about 2 hours.
