I always have granola on hand at home. It’s usually some random mix of oats, nuts, fruit and seeds all baked in a sweet maple or honey coating until its crunchy, crispy and delicious. It’s quick to make and always better than store-bought.
Granola is always good with a splash of milk and fresh fruit or yogurt, but I also love it sprinkled over a salad or ice cream for some added crunch.
This recipe is made with coconut oil and maple syrup which gives it a great coconut flavor and crisp texture. The added fruit, nuts and seeds are just an added bonus! That really is the best thing about granola, you can mix or match all of your stir-ins and the syrup mixture to fit any flavor.

Ingredients
- 1/3 cup honey
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1/2 teaspoon pure vanilla extract
- 4 cups gluten-free rolled oats ( I used ten Free Rolled Oats”>Bob’s Red Mill)
- 3/4 cup chopped nuts
- 3/4 cup shredded unsweetened coconut
- 1/2 cup mixed dried fruit (I used cherries, apricots and cranberries)
- 1/2 cup raw sunflower seeds
- 1/4 cup sesame seeds
- 2 tablespoons hemp seed
- 1 tablespoon flax seeds
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Heat oven to 350°F and line two rimmed baking pans with parchment paper.
- In a medium bowl, stir together the honey, maple syrup, coconut oil and vanilla extract until well combined; set aside.
- In a large bowl, stir together remaining ingredients until well combined. Add the honey mixture and toss until the oats are well coated. Spread evenly between prepared baking pans.
- Bake 15 minutes, stir granola and rotate pans. Bake an additional 10 to 15 minutes or until deep golden brown. Allow the granola to cool completely, about 30 minutes. Store in an airtight container.
