We sipped on Peach Bellinis while visiting a friend’s cabin on the lake. They were slushy, sweet, bubbly and fruity.
I decided to make them with a bit of a twist. Instead of the traditional peach schnapps, I used bourbon because it goes well with peaches and it’s Bourbon Heritage Month. But do you really need an excuse to drink bourbon? I didn’t think so!
They’re sweetened with a bit of ginger simple syrup to make them even more flavorful.
Bourbon Peach Bellini
Prep Time: 10 minutes
Start to Finish: 25 minutes
Ginger Simple Syrup
1 tablespoon chopped fresh ginger
1/2 cup granulated sugar
1/2 cup cold water
Bellini
1 bag (16 oz) frozen sliced peaches, slightly thawed
1/4 cup ginger simple syrup
1/4 cup bourbon
1 bottle prosecco or dry sparkling wine
Thinly sliced peaches, if desired for garnish
In a small saucepan, heat the ginger, sugar and water over medium heat for 2 minutes, stirring frequently until the sugar dissolves. Remove the saucepan from heat; let stand for 15 minutes. Strain, discard ginger pieces and set simple syrup aside.
Add frozen peaches, 1/4 cup of the ginger simple syrup and the bourbon to a blender; blend until smooth.
Fill glasses half-full with the peach puree. Carefully top with prosecco and stir gently (be careful, the drink will foam). Serve immediately.
