With summer winding down and the start to a long weekend ahead, I settled in with the puppy dog on the patio this afternoon and poured myself a cocktail. It’s been a busy summer and this long weekend is much-needed. This cocktail is lighter on the booze, but makes up for it in fresh flavor. Pimm’s is a slightly spicy gin-based liquor from Britain. It’s usually topped with lemonade, ginger ale or champagne and garnished with mint and cucumber.
This is the prefect drink to sip all day long while wearing a big floppy hat and dramatic sunglasses. For an added bonus, the drink is topped with a handful of fruits and veggies to make you feel better about drinking before 5pm.
Pimm’s Cup Cocktail
Prep Time: 5 minutes
Start to Finish: 5 minutes
2 oz Pimm’s No. 1 liquor
1 oz gin
1/2 oz fresh lemon juice
Ginger beer
Cucumber, jicama, strawberries and lemon, for garnish
Pour the gin and Pimm’s into a tall glass with ice cubes. Add the lemon juice and ginger beer; stir gently. Garnish with lemon, cucumber, jicama and strawberries.
Makes: 1 serving
